Tasty Goodness

Happy Friday! I tried to see The Dark Knight last night, but it was so crazy crowded that M. and I just went over to Best Buy and bought Batman Begins so we could suffer a little less for a few more days. When I saw the packed line to get tickets, I was ok with it, but the overflowing theater lobby of people waiting for the giant theater to open made M. get a look on his face like he was going to be sick, so we caved. I guess we'll try again on a week night. Damn kids! We also stopped by Barnes & Noble and I got a copy of that book Twilight that everyone keeps talking about. The first in a vampire series written for teens. So far, a good addition to vampire lore, with a female lead character. I like.

I made use of a great wedding present: a pressure cooker. I made carnitas using it and it turned out pretty good! You basically cook the pork in the pressure cooker with some veggies (tomato, garlic, and onion), a liquid (I used water) and spices (oregano, cumin, pepper, bay leaf ) and what normally takes 8 hours takes only 2!

Then you separate the pork from the liquid stock and shred up the pork

After it's shredded, you put it under the broiler to crisp up, which I don't have a picture of, because we ate it!

I used it to make soft tacos- very tasty.

Today, we took the opportunity to enjoy the good weather by going to the batting cages. Batting cages are a good way to release pent up aggression. I was much better than the last time, though I'm so out of shape that I am sure tomorrow I will hurt in places I never use. M. is such a good coach, he knows just how to explain what you are doing wrong and what you need to do to get it right without being condescending or making you feel bad. You play hard, though, and you pay the price. Here's an amazing picture of my new blister!

I have been making cupcakes from this book (another stellar wedding present) lately, and today I tried the "chocolate cherry cupcakes" with cream cheese icing. They are really good! Not too heavy, not too spongy. And with little maraschino cherries (instead of fresh) they were kind of like a chocolate cherry cocktail.
Highly recommended.
